Bikini

Serves 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka

150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Put all the items into a pot, bring to a gentle boil, stirring until the sugar dissolves. After that, remove from the stove allowing it to cool fully. Decant to a sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for up to four weeks.

Preparing the Cocktail Base: Mix all the spirits and syrup into a big jug, leave to sit for 60 minutes, then strain , ideally through cheesecloth, so it's fully clarified.

For serving: Measure 85ml of your cocktail base to a cocktail shaker packed with ice, and stir gently for a minute to chill. Filter into a frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it using a quick spritz of the essential oil over the top.
